The breakfast casserole from every commuter's dreams

Things you’ll need:
-6-8 eggs or egg substitute
-Biscuit dough (in a can)
-Shredded chicken
-Bacon
-Shredded cheese
-1/2 cup of milk
-1/4 cup of heavy cream (optional)
-Salt/pepper to taste

As a commuter, I often find myself torn between making breakfast and leaving early enough to get a parking spot on campus that doesn’t require a two-mile walk to class. According to my mother, and most doctors, breakfast is the most important meal of the day. I look at it as the best excuse to treat myself to anything that involves eggs and bacon. This breakfast casserole is my new go-to for busy mornings and last minute snacks, since it can be made the night before and devoured over the next few days. Store it in your fridge, reheat as needed piece by piece for 45 seconds to one minute in the microwave and you just might find yourself a spot in X-Lot that morning. 

Directions:
-Grease a deep baking dish. I personally love the paper baking dishes from the Dollar Store - they’re cute and perfectly sized for one serving.
-Preheat oven to 375 degrees Fahrenheit. 
-Cut the chicken into small pieces and cook them in a pan until they are no longer pink. Set aside.
-Wrap desired number of bacon strips in paper towels and place on a plate. Microwave on high for three to four minutes or until the strips are fully cooked. Cut them into small pieces and set aside. 
-Take the biscuits out of the can and flatten them against the bottom of the pan so they form a solid crust.
-Pre-bake the biscuits at 357 degrees for eight to ten minutes.
-In the meantime, mix the eggs, milk, cheese, bacon, chicken, salt and pepper in a bowl. 
-Pour the mixture over the biscuit crust, spreading the chicken and bacon throughout the top. The liquid should cover the crust entirely. Add an extra egg with some milk if necessary.
-Bake for 15 minutes. (Ten minutes for a small baking dish).
-After 15 minutes, turn the dish around inside the oven for even cooking. If desired, sprinkle more shredded cheese on top.
-Bake for an additional 5 minutes, or until the center is firmly set.
-For a crispy top, turn the oven on “Broil” for one to two minutes, keeping an eye on the dish to avoid burning it. Remove when the top is golden brown. 
-Serve with your favorite sauce or eat it on the go!
