Chef Master Supreme: Whip up an avocado chicken salad

This week, I’m putting a twist on my old time favorite sandwich: chicken salad. Many of you probably noticed the hype surrounding avocados in the past few years, so I feel I must address the trend with a quick and easy recipe that is both versatile and delicious. Avocados are awesome, you can eat them as is, spread them on toast for a quick snack, or mash them up with some cilantro and lime to eat with chips. But they have found their spot in the kitchen as a replacement for some every day condiments like mayonnaise, butter or olive oil. Fun fact: you can actually make deliciously healthy brownies with avocados (recipe to come soon).

You will need:

-1 avocado

-3 tablespoons of plain Greek yogurt

-Grilled chicken

-Lemon juice

-Fresh cilantro

-1 teaspoon of paprika

-Salt and pepper to taste

Cut up the grilled chicken in small pieces, or shred it. Cut avocado in half, scoop it out into a bowl. Mix in Greek yogurt, avocado, chicken and spices. Add a few drops of lemon juice to keep the avocado from turning brown too quickly. This will actually help the salad remain fresh in the fridge for a day or two, as long as you put a plastic film over it. Eat the salad as is, or spread over toast to make a chicken salad sandwich.
