This week’s recipe is the perfect treat to get you in the mood for summer: Frozen bananas. This weekend’s warm weather got me thinking about my favorite summer treats and frozen bananas are definitely high on the list. They’re sweet, creamy and pair deliciously with a plethora of toppings. I’ve included three of my favorites: Coconut almond, chocolate peanut butter and yogurt granola. This healthy dessert is packed with potassium and antioxidants, and is incredibly easy to make. No matter which toppings you choose to use, it won’t disappoint!
Coconut Almond Frozen Bananas
Ingredients
10 bananas
1 cup of semi-sweet chocolate chips
½ cup of almond, chopped
½ cup of shredded coconut
20 popsicle sticks
Directions
Peel bananas and cut in half. Place popsicle sticks inside bananas and put on a tray lined with parchment paper. Freeze for one to three hours depending on how firm you want your bananas to be. Combine almonds and coconut into a bowl. Heat semi-sweet chocolate chips in microwave at 30 second intervals until liquified. Coat bananas in chocolate and sprinkle with the almond and coconut mixture. Serve immediately or set aside and freeze for an additional 10 minutes.
Chocolate Peanut Butter Frozen Bananas
Ingredients
10 bananas
1 cup of creamy peanut butter
1 cup of mini chocolate chips
20 popsicle sticks
Directions
Peel bananas and cut in half. Place popsicle sticks inside bananas and put on a tray lined with parchment paper. Freeze for one to three hours depending on how firm you want your bananas to be. Heat peanut butter in microwave at 30 second intervals until liquified. Coat bananas in peanut butter and sprinkle with mini chocolate chips. Set aside and freeze for an additional 20 minutes.
Yogurt Granola Frozen Bananas
Ingredients
10 bananas
1 cup of vanilla yogurt
1 cup of granola
20 popsicle sticks
Directions
Peel bananas and cut in half. Place popsicle sticks inside bananas and put on a tray lined with parchment paper. Freeze for one to three hours depending on how firm you want your bananas to be. When bananas are ready, coat in yogurt and sprinkle with granola. Set aside and freeze for an additional 20 minutes.
