Chicken fried rice is one of my favorite comfort foods—it’s packed with so many delicious flavors. The combination of rice, egg, veggies and chicken all cooked together and drenched in salty, savory soy sauce never fails to make my mouth water. This week’s Melissa’s Menu brings chicken fried rice to your own kitchen and will easily make it one of your go-to meals. This version of the classic Chinese food has all of the same amazing flavors as the fried rice from your favorite take-out place, but can be made right at home and is much healthier. It’s a really simple recipe that’s perfect for either lunch or dinner, and you can substitute the chicken with shrimp, pork, steak or even more veggies.
Ingredients
1 tablespoon of a cooking oil of your preference
1 clove of minced garlic
¼ cup of diced white onion
1 carrot, sliced
¼ cup of frozen corn
¼ cup of frozen peas
1 cup of cooked brown rice
1 cup of rotisserie chicken, shredded
1 egg, scrambled
1 tablespoon of soy sauce
½ tablespoon of sesame oil
salt, to taste
pepper, to taste
green onion, for garnish
sesame seeds, for garnish
Directions
In a large skillet, heat oil over medium heat. Add garlic, onion, carrot, corn and peas. Cook until carrots are tender, stirring occasionally. Add brown rice, chicken, egg, soy sauce, sesame oil, salt and pepper to taste, and stir. Cook for another minute, or until everything is heated thoroughly. Serve with a sprinkle of sesame seeds and green onion. Enjoy!
